Rhubarb Squares

These squares were a hit at our food testing! Try making them yourself at home using some farm fresh rhubarb from Lester's Farm Market!

For the crust

  • 1 and ½ cups flour
  • 1/2 cup sugar
  • ¾ cup cold butter, cubed
  • 1 tsp Cinnamon
  • Zest of one lemon
  • 1 tbsp lemon juice

For the filling

  • 3 large eggs
  • 1 1/2 cups white sugar
  • ½ cup flour
  • ½ tsp salt
  • 4 cups rhubarb, diced
  • Zest of 1 lemon 

Directions

  1. Preheat oven to 350 degrees.
  2. Combine the sugar and butter in a bowl. Add the lemon zest, cinnamon and flour to the mixture.
  3. Press the crust into a 9 inch square baking pan. Bake the crust for 10-12 minutes.
  4. While the crust is cooking, combine ingredients for the filling in a large bowl. Gently stir in the diced rhubarb. Pour the rhubarb mixture into the hot crust and place in oven. 
  5. Bake for 30-35 min or until the filling is set.
  6. Let cool for 1 hour and cut into bars.
